I am one of the least creative people around when it comes to weeknight meals. Cooked protein – check. Bag of veggies from the freezer – check. Baked potatoes if I’m feeling fancy – check.
That’s pretty much my formula for a dinner. It also doesn’t help that the twins are almost three. If there are too many ingredients involved in a dish, one of two things will happen. (1) They simply won’t eat it. (2) They will spend the entire meal time picking out whatever ingredient is deemed “ucky” that day.
So those are my criteria for weeknight meals. Also, it has to be tasty enough to prevent me from throwing my hands in the air and going out for chicken nuggets… again.
Enter: my weeknight green beans. This is the perfect weeknight side. It’s quick (less than 15 minutes) and super tasty. A light sauce makes this green veggie palatable for even the pickiest of eaters.
I love pairing these beans with ham and potatoes. We typically just cut up and heat turkey ham. Baked potatoes are usually made in the microwave, because I probably forgot to start the oven in time!
My kids love this weeknight meal. They will devour an entire plate, and then usually ask for seconds. All of this while I’m doing a victory dance in the kitchen because my kids are eating something green!

Weeknight Green Beans
Description
Green beans in a delicious Worcestershire an mustard sauce. This simple side is perfect for quick weeknight meals.
Ingredients
- 1 pound Frozen Green Beans
- 2 tbsp Butter
- 2 tbsp olive oil
- 1 tbsp Yellow Mustard
- 1 tbst Worcestershire Sauce
- pepper (to taste)
Instructions
- Melt butter in a large saucepan over medium heat. Add olive oil, mustard, and Worcestershire sauce. Stir until combined.
- Add frozen green beans. Toss to coat and cover. Cook for 12 minutes, stirring occasionally, until green beans are heated through. Add pepper and serve warm.
