When we were little, my mom would take my sister and me on weekend trips – bed and breakfasts or camping.  On one B&B weekend in Texas, we discovered this amazing cookie.  I don’t know how many pink sweeties I ate that weekend, but it was well into the double digits.  My mom got the recipe from the B&B owner, and we’ve been making these cookies ever since.  I thought I would share them now, just in time for Valentine’s Day.

The most delicious melt-in-your-mouth-soft almond sugar cookies


Ingredients

Scale

For the Cookies

  • 1 cup butter, softened
  • 2 cups sugar
  • 3 eggs
  • 2 tsp almond extract
  • 4 cups flour
  • 1 Tbsp baking powder
  • 1/4 tsp cream of tartar
  • 1/2 tsp salt
  • red food coloring

For the Glaze:

  • 1 cup powdered sugar
  • 1/2 tsp almond extract
  • approx. 1 Tbsp milk (any kind will do)

Instructions

  1. Cream butter and sugar. Add eggs one at a time and almond extract. Stir in dry ingredients. Add a few drops of red food coloring to the dough and swirl throughout.
  2. Thoroughly chill dough. Measure tablespoons of dough and roll into balls. Flatten dough balls and place on a greased cookie sheet. Bake at 350 degrees for 14 minutes.
  3. While cookies are baking, mix together powdered sugar, almond extract, and milk. Glaze cookies while still warm.

  4. These came out so deliciously well but the batter was VERY sticky, even after I chilled it over night because I ran out of time to continue baking…. Do you possibly know why it’s so sticky?
