For those of you who don’t know, I can be a really lazy cook. Making an involved dinner is rarely high on my to-do list.
These meatballs come together in a snap. I just combine the meatball mixture with a fork. Then I use a mini ice cream scoop to form small meatballs.
I really should call these “morning meatballs”, because I always seem to be making them in the morning. I bake them up, cover them in sauce, and pop them in the fridge for = a handy meal option later. Too easy!
Also – If you read my other “lazy cooking” recipe posts, you may know that we often eat meatballs plain. As in, “tonight for dinner, we are having meatballs, mashed potatoes, and mixed veggies.” I would not recommend doing that with these meatballs. You really need a sauce to help “hide” that spinach flavor – especially if you have kiddos in the family. Enjoy!
Lazy Weeknight Turkey + Spinach Meatballs

Ingredients
- 20 ounces ground turkey
- 1 egg
- 1 package frozen spinach (10 ounces)
- 1/3 cup Italian style bread crumbs
Instructions
- Thaw the spinach and drain well. Ringing out the spinach in a couple of paper towels works well!
- Combine 4 ingredients in a large bowl.
- Scoop into mini meatballs, and place on a parchment-lined baking tray.
- Bake at 400 degrees for 15 minutes or until cooked through. Serve with a favorite marinara sauce.
