I don’t always share recipes on my blog, but when I do it’s because they’re so simple and tasty that I can’t resist.
This soup is one of those recipes.
I know weeknight meals are a challenge for many families, and mine is no exception. I’m always looking for ways to get a quick, healthy, and tasty meal on the table. Bonus points if my kids actually eat it!
Spinach is a super food, but it’s not always family-friendly. I mean, seriously. If I want to ensure I get to eat a meal uninterrupted without a little one asking for a bit, I bust out a salad. There’s something about leafy greens that make my kiddos run in the opposite direction. Sneak a bit of spinach in with two kid favorites – creamy tomato soup and cheesy tortellini – and you might just have better luck.
Let’s also talk about food photography for a second. This recipe was created and photographed on a day when I was feeling particularly lazy… and staging food (or any craft for that matter) can be a bit of work. I didn’t feel like busting out all of my props, so I enlisted the help of a very talented photography assistant:
This isn’t considered “child labor,” is it?!?!?! I mean, he is having fun. I think. That cup of yogurt wasn’t used to bribe him. Not at all. And we won’t talk about the fact that I *made* him make the soup himself:

Now for the recipe – it’s super simple and came together in a snap.
Spinach and Tortellini Tomato Soup
Description
This soup is creamy, tasty, and a snap to whip up. Made with only 7 ingredients, it’s perfect for a quick weeknight meal that the whole family will love!
Ingredients
- 3 tbsp olive oil
- 1 shallot (finely chopped)
- 8 ounces fresh spinach
- 8 cups vegetable broth
- 6 ounces tomato paste
- 9 ounces cheese tortellini
- 1 cup heavy cream
Instructions
- Over medium heat, sautee olive oil, shallot, and spinach. Stir occasionally, about five minutes, until spinach leaves have wilted.
- Add broth and tomato paste. Bring to a boil.
- Add tortellini and gently boil for 7-9 minutes, or according to package directions.
- Stir in cream to combine. Serve hot.
