Confession time: I am a really competitive person, but I’m quiet about it. I’m not an in-your-face, has-to-win-at-Monopoly, type of competitive. But, the silent, have-to-do-better-than-you type of competitive.
So, when I was challenged to make a recipe for a light spring sandwich that can be made with six (6) ingredients or fewer, my competitive side came out and I whipped up these Spring Sandwich Stacks!
Here’s what you’ll need to make these sandwich stacks:
- Pepperidge Farm® Whole Grain sandwich bread
- Hillshire Farm® Thin Sliced Honey Ham lunch meat
- Hellmann’s® Real Mayonnaise
- chopped chipotle peppers in adobo sauce
- fresh arugula
- Swiss cheese slices

How to Make Spring Sandwich Stacks
Gather your ingredients.
Mix up your homemade chipotle mayo. Since I’m a bit of a wuss with heat, I use a ratio of 1/2 cup mayo to 1 tsp. chipotle. For everyone else who likes a little extra kick, I would recommend 2 tsp. of chipotle.
Spread your homemade chipotle mayo mix on both slices of sandwich bread.
Add your ham, Swiss cheese, and fresh arugula.
Cut into squares or triangles, and serve on a decorative toothpick.
