Anyone else a big fan of muffin mix pancakes? This is one recipe you will want to keep on hand because it only takes three ingredients. It’s so easy to make, even your kids can do it!

Super Easy Muffin Mix Pancakes

Thanks to the three ingredients this recipe calls for, they are indeed easy to make. But the fact that you can switch up the flavors takes these muffin mix pancakes to another level. Between these and the pancake batter donuts with my grandma’s infamous homemade brown sugar syrup, I’m looking forward to our next pancake weekend!

Why I Love this Recipe

We are heavy pancake lovers in my house. So much so, we try to have them most weekends. But since we have them quite often, I’m always looking for ways to change up my pancake routine. And these muffin mix pancakes are just what I’ve been needing!

Ingredients Needed

  • 6.5oz package blueberry muffin mix*
  • ⅔ cup milk
  • 1 large egg Ingredients for muffin mix pancakes.

*This recipe calls for blueberry muffin mix but you can always change it to a different flavor. There are so many to choose from!

How to Make 3-Ingredient Muffin Mix Pancakes

  1. Heat a griddle or skillet to medium low. Grease if you are not using a nonstick surface.
  2. In a large bowl, combine all of the ingredients and stir well.
  3. Pour a small amount onto the griddle or pan and cook for 2-4 minutes, until all of the edges have bubbled.Plate of muffin mix pancakes with homemade brown sugar syrup.
  4. Flip, then cook for an additional 2-4 minutes.
  5. Your pancakes should be golden.
  6. Serve with butter and/or syrup if desired.

TIP: If you’re not using a nonstick surface, consider using butter or some form of vegetable oil.

What to Serve With Muffin Mix Pancakes

I like to bake up a batch of bacon. All I do is line a rimmed baking sheet with foil and lay out the bacon. Bake at 350 until crispy and you’re done! It’s so easy and adds a little protein to our breakfast to balance out the sugary pancakes and syrup. Other options to consider are:

  • scrambled eggs
  • sausage (patties or links)
  • fresh berries
  • banana slices
  • a dollop of Greek yogurt

The possibilities and combinations are just about endless, but I like to keep it nice and simple.
