My mom and I decided to explore a local farmers market on Sunday, and boy am I glad we did! Aside from the fact that my mom bought me a bouquet of flowers (thanks mom!), I found a great new source for local produce. Among my purchases was a bunch of fresh rhubarb. Gasp! I know, I actually paid money for rhubarb. You would think that since I live in Minnesota, I would be able to beg, borrow, or steal some from someone’s garden. Well, I don’t really know people with gardens, and I didn’t feel like risking arrest and trespassing charges in the pursuit of some free produce. So, I paid 2 bucks for a bunch of rhubarb.
So, what’s my favorite dessert to make with fresh seasonal fruit? Crisp. This is an obvious choice, because I feel that by making a crisp, you add enough sugar to absolutely negate any nutritional benefit from eating fruit. I also believe skittles count as a serving of fruit. Hey, whatever your metabolism can handle, right?
Blueberries were looking extra nice at the grocery store on Monday, so I opted for rhubarb blueberry crisp.
Toss the fruit with lemon juice, flour, and sugar.
Sweet crumbly topping and tangy fruit. Try not to eat all the topping before the crisp makes it into the oven. Hopefully you will have more success than I did.
