Whip up these easy 4-ingredient turkey + spinach meatballs for a quick and healthy weeknight dinner! Bake them in the oven to save time and make for easy clean up!
No – I’m not kidding. These turkey and spinach meatballs have only 4 ingredients. Yes – I stole this idea from my sister. Thanks, sis!
For those of you who don’t know, I can be a really lazy cook. Making an involved dinner is rarely high on my to-do list.
These meatballs come together in a snap. I just combine the meatball mixture with a fork. Then I use a mini ice cream scoop to form small meatballs.
I really should call these “morning meatballs”, because I always seem to be making them in the morning. I bake them up, cover them in sauce, and pop them in the fridge for = a handy meal option later. Too easy!
Also – If you read my other “lazy cooking” recipe posts, you may know that we often eat meatballs plain. As in, “tonight for dinner, we are having meatballs, mashed potatoes, and mixed veggies.” I would not recommend doing that with these meatballs. You really need a sauce to help “hide” that spinach flavor – especially if you have kiddos in the family. Enjoy!
