Let’s backtrack. Meatballs are a staple in my home. As a protein source, they are second only to hotdogs in popularity. I would have to say that they are about on par with chicken nuggets.
Do you notice a trend here? My kiddos like the processed stuff. While it may be easier to buy frozen meatballs, I like the idea of making them myself and knowing exactly what goes into them.

Turkey Apple & Kale Mini Meatballs – a Few Notes
- steaming the kale – Microwave a bowl of water for a few minutes. Add the kale and place a plate on top of the bowl. Let steam for a few minutes. Easy.
- quantity – yes, this makes exactly 24 mini meatballs. The possibilities are endless with a 20-ounce package of ground turkey and whatever add-ins you like!
