I stocked up on my new Eggo Waffles at Walmart, where you can get all of the ingredients for this tasty breakfast treat.
- Eggo® Nutri-Grain® Blueberry Waffles
- whipped cream cheese spread
- fresh strawberries and blueberries
- decorative toothpicks
How to Make Mini Berry Waffle Sandwiches
Start by toasting your waffles. Then cut them into quarters.
Scoop about one tablespoon of whipped cream cheese spread onto a waffle triangle. I used a mini ice cream scoop for this, which made scooping the whipped cream cheese a breeze!
Next, gently press the cut up berries into the whipped cream cheese spread.
Then top with another waffle triangle. Use a toothpick to hold these mini sandwiches together.
My kids loved these mini waffle sandwiches! In fact, I barely got these photos taken before their little hands snatched up these treats. We then spent the rest of the day eating everything off of toothpicks in mini sandwich form, but that’s another story…
